Ingredients

For the bread:

  • 1 (15.25 ounce) box lemon cake mix, dry (I used Betty Crocker)
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 4 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1/4 cup poppy seeds

For the glaze:

  • 2 cup powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons lemon juice (adjust for desired consistency)

Instructions

For the bread:

  • Preheat the oven to 350 degrees F. and grease and flour, or spray two 8×4 inch loaf pans.
  • In a large mixing bowl, add all of the ingredients except the poppy seeds. (Do not add the ingredients listed on the back of the lemon cake mix, just add it dry with the other ingredients in the recipe.)
  • Mix with an electric mixer on medium until well mixed.
  • Add the poppy seeds and mix well.
  • Pour into the two prepared loaf pans.
  • Bake at 350 degrees F for approximately 30 minutes, give or take 5 minutes.
  • A toothpick inserted into the center should come out either clean or with a few moist crumbs on it, but no raw batter.
  • Remove the pans from the oven and let cool on a cooling rack for about 15 minutes.
  • Remove from the pans and let cool completely on the cooling rack before adding the glaze.

For the glaze:

  • Add all of the glaze ingredients to a medium sized mixing bowl and mix with a whisk. An electric mixer is not necessary.
  • Once the bread loaves have cooled, drizzle or pour the glaze onto the tops and serve.
  • Store bread wrapped in plastic wrapped or in an airtight container at room temperature for up to 4 days.
