Ingredients

For the cake:

  • 4 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1 dash salt
  • 1 tablespoon butter, melted
  • 1 1/2 teaspoons vegetable oil
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 2 crushed Oreo cookies (or other type of cookie you like)

For the glaze:

  • 1 tablespoons butter, melted
  • 3 tablespoons confetioner's sugar
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon milk
  • crushed Oreos for sprinkling (optional)

Instructions

For the cake:

  • Add the Oreos to a ziplock bag and smash with either a meat mallet or a rolling pin to crush up the cookies. Set aside.
  • In a microwaveable mug, add the butter and microwave it for about 20-30 seconds until melted.
  • Add the oil, milk and vanilla to the mug and mix well with a fork.
  • Add the dry ingredients (flour, sugar, baking powder and salt) to the mug and mix until everything is combined.
  • Add the crushed Oreos and mix. (Reserve a small amount of the Oreos to sprinkle on top of the baked mug cake.)
  • The batter will only fill the mug about halfway up. This is correct as the cake will rise a bit when baking.
  • Microwave the mug for about 45 seconds. Let it sit in the microwave for 1 minute and test to see if the cake is set and a little firm to the touch on the top.
If not, microwave for another 10 seconds and test again. Try not to overbake and err on the side of the lower baking time when starting out. (Microwaves will vary, so the exact bake time will vary.)
  • Once the cake is done, let it sit in the microwave for 1 minute while you make the glaze.

For the glaze:

  • Add the melted butter, confectioner's sugar, vanilla extract and milk to a small bowl and mix well with a small whisk or a fork until smooth.
  • Spoon the glaze onto the warm mug cake. Sprinkle with more crushed Oreos if desired.

Notes

This mug cake should be eaten shortly after baking in the microwave and is best served warm.
