Easy Lemon Cookies

– 3 cups all-purpose flour – 1 teaspoon baking powder – 1/4 teaspoon baking soda – 1/4 teaspoon salt – 1 cup sugar – 3/4 cup unsalted butter, room temperature (1 1/2 sticks) – 4 oz cream cheese, room temperature (1/2 of an 8 oz. block) – 1 large egg – 2 teaspoons lemon extract – 2 tablespoons milk or cream – 1 teaspoon vanilla extract – 4-5 drops liquid yellow food coloring, optional

Cookie Ingredients:

Glaze Ingredients:

– 2 ½ cups confectioner's sugar – 3 tablespoon milk or cream – 1/4 teaspoon lemon extract – 1 tablespoon corn syrup

Mix all of the cookie ingredients together. Cookie dough will be thick. Cover & chill for about an hour.

Add parchment paper to a cookie sheet. Scoop cookie dough onto the sheet about two inches apart.

Bake in a pre-heated oven at 375 degrees F for 12 minutes. Cool on a rack before adding the glaze.

Add all the glaze ingredients to a bowl and mix well.

Spoon the glaze onto the tops of the cooled cookies. Let the glaze set up for about 10 minutes.
