Cake Mix Carrot Cake Cookies

– 1/2 cup unsalted butter, room temperature (1 stick) – 4 oz. cream cheese, room temperature (1/2 block) – 1 (15 oz) box carrot cake mix  – 2 large eggs, room temperature – 2 teaspoons vanilla extract – 2/3 cup mix-ins optional: nuts, raisins, mini chocolate chips etc.

Ingredients for the cookies:

– 4 oz. cream cheese, room temperature (1/2 block) – 1/4 cup unsalted butter, room temperature (1/2 stick) – 1/2 teaspoon vanilla extract – 1/2 teaspoon cinnamon – 2 1/2 cups confectioner’s sugar – 1 tablespoon milk – 1 tablespoon corn syrup  – crushed walnuts for sprinkling (optional)

Ingredients for the frosting:

Preheat oven to 350 degrees F.  In a large bowl add the room temperature butter and cream cheese. Mix with an electric mixer on medium until smooth.

Add the dry carrot cake mix, eggs and vanilla extract and mix on medium until well combined.

Add any additional ingredients you want, like raisins, chocolate chips, nuts etc. Use a large spoon to stir them in.

Drop by rounded tablespoonful onto baking sheets.

Bake in a preheated oven for 15-18 minutes, then cool.

For the frosting: Add cream cheese and butter to a mixing bowl and mix. Add the vanilla, cinnamon, confectioner’s sugar, milk and corn syrup and mix until smooth. 

Use a spoon to swirl frosting onto each completely cooled cookie.
