Ingredients

For the cake layer:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • ½ cup milk
  • 3 tablespoons melted butter, cooled down a bit
  • 1 teaspoon vanilla extract

For the chocolate pudding layer:

  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • ¼ teaspoon salt
  • 2 tablespoons unsweetened cocoa powder
  • 1 ¼ cup very hot water

Instructions

For the cake layer:

  • Preheat the oven to 350 degrees F and spray an 8×8 or 9×9 inch baking dish with non-stick baking spray.
  • In a mixing bowl, whisk together the flour, baking powder, salt, sugar and cocoa powder.
  • Stir in the milk, melted butter, and vanilla extract until well combined. (You don’t need an electric mixer for this.)
  • Spread the batter evenly into the baking dish. Set aside (do not bake yet) while you mix up the chocolate pudding.

For the chocolate pudding layer:

  • In a separate bowl, mix the granulated sugar, the brown sugar, salt and the two tablespoons cocoa powder.
  • Sprinkle the mixture evenly over the batter in the baking dish.
  • Pour the hot water over the entire mixture. Do not stir; just let it sit.
  • Bake in the preheated oven for about 40-45 minutes. The top will still be a little jiggly.
  • Remove from the oven and let it cool for 30-40 minutes on a cooling rack, so that the pudding will thicken under the cake. It needs to sit and cool for a bit so that the pudding will thicken or it could be too runny.
  • Spoon into a bowl and serve warm. Ice cream or whipped cream can also be added.

How to Store: This cake should be stored, covered well, in the refrigerator and can last up to 4 days.
How to serve: Serve this cake warm. If it’s cold, add a serving into a small plate or bowl and heat in the microwave.
